“Podere il Pozzo” extra virgin olive oil is also produced on the farm from trees growing at about 350 m elevation. This oil has a very low fat content and an intense and characteristic Tuscan flavor. The olive trees, many of which are more than 100 years old, are spread over the hilly areas where they alternate with vineyards, creating the typical landscape of the territory.
Cultivation follows tradition: irrigation only when absolutely necessary, pruning in alternate years, and only occasional treatments against parasites due to the fact that phytosanitary emergencies are rare. The harvest is carried out by hand, generally in November, plucking from the trees only the fruits that are at the right stage of maturation. Cold-pressing takes place within 72 hours of the harvest to obtain a perfectly extra virgin oil with a strong green color and excellent aromatic and nutritive qualities.
